    Ok, so if they are out, pick em. I was going to ask that because yesterday I was walking 10 acres of woods my parents own and found a patch of 10 or 15 that must have just popped up. Ill go back today and grab em. :)

    on that note, how do you keep these after you pick them? throw them in the fridge? freeze em? fry them immediatley? Ive cooked them before, just dont know how long they will keep for.

    The way I learned was to trim the bottom of the stem, slice the mushroom in half (longways) and soak them in water. You'll need to rinse and soak a couple of times. Some folks will put a little salt in the water as well to kill the bugs. They should keep for a few days if they are soaking in water.

    Guess you never put a mason jar over one and checked it every couple of days huh? They will get bigger even without the jar, we usually leave the smaller ones and come back afew days/week later and they are bigger.

    Soak in salt water for an hr or so, rinse. Cut in half longways and lay on paper towel, cover with more paper towel pat dry.
    Put paper towel on a plate(cookie sheet if you have the room/enough mushrooms). place a layer of them on the paper towel cover with more paper towel another layer of shrooms and so on.
    They should last a week or so doing it this way

    Excellent, thanks for the info everyone.

    Now, my last 2 questions:

    1) how much salt/water?
    2) what is the procedure for freezing? Ive asked a couple of guys around here that pick them on a regular basis and have received multiple different answers :)

    You can either use a large bowl or fill the sink up for your water. Salt, the more the better I feel, gets rid of all the bugs.
    You'll want to rinse after the soak to remove bug carcases.

    For freezing, My mom cleans like described,dries them off, rolls in flour then lays them on a cookie sheet covered in wax paper...freeze completely
    After frozen, put in ziplock bag(frozen completely so at this step they don't stick together). When cooking frozen mushrooms, DO NOT THAW!! they will turn to moosh. Heat your butter ( I prefer either olive oil or half olive oil and half butter) drop frozen mushrooms in and cook

    I'm down in Bedford, and didn't find any yesterday. Today I went to the same "old faithful" location, and found 63 in about twenty minutes. I forgot a bag, so I had to take off my shirt to carry them in. Fried up half of them to go with dinner tonight, and boy were they good.

    Anybody find any as far north as Lafayette yet? I looked around a little today and didn't see any yet. About half of my may apples are open, the rest are still sprouting up. I barely have any buds on my trees yet. Seemed to be a lot more overhead cover when I found them last year.
