    And chez, I don't use water when I smoke. One could add a water pan to help with the moisture in the meat.

    I think I'm gonna try an indirect setup on my Weber kettle to get the higher heat you suggested. I smoked a whole eye-of-round beef roast recently in this fashion and it turned out amazing.

    My drum maxes out around 330° (at least until I get an air controller to stoke it up a bit).

    1 inch rings. That's a steal of a price. I had to go with extra high rings to clear my welded sights and charging handle. But if you have a flat-top AR you can probably clear the scope bell with Mid-Height rings.

    Cool. I may have a set.

    Anybody wanna buy a slushy machine?

    I've had one of these since my old restaurant stopped using it. My wife would love for it to get out of our house.
