Howdy Jay! I'm sure I'd like that too. I've got a can of Progresso's version, but it also has chicken in it too. I'm a big fan of cream-based soups. Good comfort food. Susan's not a fan though. She likes broth-based soups.

Mom used to make vegetable soup quite often. Sometimes she'd put beef in it too. I hated it either way. Water with vegetables or water with vegetables and beef... either way, I thought it was yucky.

Onion soup with Swiss cheese melted over the top. They serve that at the Rathskeller but as a prelude to your actual meal. Killer flavor.
Oh now I do love good French onion soup. We had these big round croutons at Fridays that we'd put on top and then a big slice of provolone that we'd melt under the broiler. Swiss would be good too!

I don't think I've ever had an onion soup. I'm a big fan of onions though.
It's usually a beef broth based soup. Pretty simple really. I don't know why I never think of making it. It's best if you have little soup crocks though, so you can put them under a broiler to melt the cheese on top.

Soup is close to done. I’ll snap a pic for reference purposes.
Looking forward to seeing it! I've already been thinking about what kind of bread to get if I make it. I'm thinking a nice crusty baguette for dipping. :) Ooh, and then I could get a wheel of Brie and have baked brie to use up the rest of the baguette.

Steeping just a bit longer. But really ready to eat.
