Most definitely the sharps rifle. And you are also correct about the ammo. It is, however, a sharps rifle. And they can also be had in 45-90 or 45-70, but I would agree that it should be a 45-110.

The 70 looks more economical.
But, the 110 has that "badass" quality.
The M1A is nice, and I already have 2 rifles in .308.
The M1 is nice, and history. But would be my first .30-06.
And I've always wanted a lever. .357 would go nice with the two .357 revolvers.
There's a whole thread about DIY on INGO, go ahead and get them all. I agree with the 45-110 being more badass, also extremely more expensive, as is 45-120. When you said sharps I wasn't sure if you meant an actual Shiloh Sharps rifle, or one of the other rifles from some of the other manufacturers. I see you meant an actual Shiloh Sharps. Don't know if you have contacted them yet, if they have some in stock good, if not, then can be quite a wait to get them sometimes. A guy I know waited 2 years for his.
