Rules for Amish can vary widely by the community to which they belong. Not all of them are pacifists (by a long shot) and will do what is necessary to defend their families. In my experience, Mennonites are far more likely to be pacifist and unwilling to defend themselves. Some Mennonite communities have dress and behavioral customs virtually indistinguishable from Amish to outsiders.
I know a dealer who sold a bunch of Colt ARs and 1911s to a group of them back in the early 1990s in Illinois. I doubt if those were for hunting. Violent criminal actors would be ill advised to assume Amish won't defend themselves.
