One of grandma's old friends (as in one of those friends I can't remember not knowing) shared some pineapple cake with cream cheese icing that is out of this world. She shared her recipe as well, so I can make it whenever I want!

I have some of granny's recipes and can never replicate them. I think I am getting a "pinch" and a "dash" mixed up.

Hubby said he heard some the other day. That is a sure sign of spring, right?

I made carrot cake last week but that is long gone. Hubby bought donuts this morning so I guess I could have one of those. I think there is a cherry tart in there for me. Maybe I'll make that cake tomorrow. I got bread made today but was busy cleaning and doing laundry so didn't do any other baking.

I'm seeing someone sharing that awesome recipe

2 cups flour
2 eggs
2 cups sugar
2 teaspoons baking soda
1 teaspoon vanilla
1 can crushed pineapple

Mix, beat 2 minutes, place in greased and floured 9x13 pan.

Bake 40 to 45 minutes

Cream Cheese Icing

8 ounces cream cheese
1 stick butter
1 teaspoon vanilla
2 cups powdered sugar
Bet 2 minutes, spread on cake while still hot
