    Well I’m up at 4am should I let it roll through the night?? Not like I’m trying to eat it tonight

    Wrap put on 200 and let it go all night? Or is that a bad idea.

    You have a thermometer (app tied to your phone) that will alert you when you hit expected temperature? If you do I'd probably let it roll.

    I'm betting it'll be done and ready for wrap before midnight

    I don’t do midnight…. lol no fancy phone app. My plan is wrapping like you guys said but instead of cranking heat and rushing I backed it down… (was 225 went to 200) and I will get up a little early (2 or 3) pull it and toss it in the cooler to rest. I THINK it is wrapped really well to hold in juice but that’s what I always think …. Maybe I should pull it a little further from the new garage………

    On the bright side it is looking good

    I love to cook, and my goal, at some point in retirement, is to cook for others..
    My family owns a restaurant. If you truly love to cook and retire, Don't get into the restaurant business. You won't be cooking you'll be running a business. Hiring others to cook, wait, host, wash dishes, and manage staff. You will be doing paperwork, payroll, sales tax, renewing permits and licenses, going to mandatory "servsafe" classes, and herding cats trying to keep staff happy,
