    Tabasco is the standard. Famous Dave's may knock you off your feet! That is if they are still licensed to make it(I think in emergencies it can be used for Jet Fuel).

    Reviving this thread....man, I visited the pepper palace in Destin FL and wish I had enough money to buy one of everything. I also took their flame challenge, I survived!

    Love Tabasco sauce. 3 simple ingredients soaked in oak barrels.


    Same here. Green is awesome. Flavor AND just enough heat.

    Though Ive noticed that "gringo sauce" appears to be getting squeezed out of certain pockets here. Went to a walmart neighborhood market near where Hispanics are starting to increase. literally 25 types of hot sauces, tamale wrappers, weird dried peppers, etc. An entire AISLE of Hispanic foods. Not one bottle of Tabasco brand anywhere. *kicks rocks*.

    And the bottle of green sauce I bought is OK I guess. But its still not the same.

    Bu'falo brand Chipotle is the favorite sauce, almost as good as crunching a green serrano. Thirty years ago you had to get it mailed north.

    Making a skillet of taters with dried anchos and onions is almost a family tradition since grandad was peddling goods from the back of his hoopie in the mountains of New Mexico and learning to cook beans under ground (altitude cooking).

    You know when the produce at the super market gets culled with the new shipment coming in? They would bag them up and put a low ball price tag on it just to move them out. We would buy sacks full of chilis and make our own sauce. And also powder them in the blender after running through the dehydrator to mix with salt.

    Learned the hard way not to do that in a room with the powdered material wafting out of the blander!

    This was at a local breakfast place. I tried just a drop on my omelette. It had great flavor. I'm a whimp when it comes spicy stuff and I'm sure if I used more than a drop, it would burn my mouth. But I'd like to try some more when I can find a bottle.

    My oldest son lives in Lafayette Louisiana, which is not far from Avery Island, where Tabasco is made. I have several bottles of Tabasco Scorpion pepper that is amazing. Avery Island is the only place I've seen the scorpion sauce, so next time we go down there, I'm gonna buy a case of it.
