I like to rotate my bacon. I like both. There is something near magical with good thin cut when you get it cooked perfect.

For thin cut, I like Aldi's lower sodium bacon. It seems to cook up better than the regular stuff.

I have to pick through the packages of bacon to get ones that look just right.

I do that too, but sometimes it's deceptive. Looks great in the package but then when I take it out, it stretches to like 2 feet long and gets thin. Or there will be a couple of paper thin pieces buried in the package.

breakfast is done, i made sausage gravy over fried potatoes and 2 eggs OE on top, slice of toast.

I don't know why but I've never been a big fan of potatoes with breakfast. I'll occasionally eat them at a restaurant if they come with something, but they're not something I would order or make on my own.
