Howdy Sam...I just logged on. I guess that roast we had here last night was catching. I made Italian beef tonight with fried potatoes and a salad.

    What's in Italian Beef???

I use chuck roast and slow cooked it yesterday sprinkled with garlic salt or the powdered Italian Seasoning packets that you can buy to make dressing with. Then I shred it, remove the bone/fat and put back into the juice in the crockpot and dump in a jar of Pepperoncini (with the juice) and simmer on low in the crockpot for several hours. If I use too much of the Italian seasoning it gets too salty (hubby's on low sodium diet) so I usually just use garlic salt or garlic powder. Serve on a kaiser roll with the peppers.
