I've had pancakes at a few restaurants that were "chewy". I can't imagine what went into them to make them that way.

You know when you have to saw through pancakes with your fork there's going to be trouble. I expect that out of bagels or really good rye bread like they sell at Shapiro's, but not pancakes.
