Good choice going with the Spydie folder As far as comparing 1095 vs SR101, I personally give favor to SR101. That said, ESEE's heat treating is spot on. Both are going to stain if left wet and un-oiled. Not much of an issue since most of it will be removed the next time you use or sharpen it. If it gets really bad, you can clean it up with a buffing compound such as Flitz. Something that also helps is polishing the exposed areas of the knife with a very fine stone. The finer you polish it, the less likely it will stain. You can also coat the exposed areas of the blade with something thicker like grease. That way it doesn't dry up or rub off as easily.
