    Blueberry Cake

    ¾ cup Shortening
    1-1/2 cup sugar
    3 eggs
    ½ cup milk
    ½ tsp. cinnamon
    1-1/2 tsp. baking powder (rounded)
    ¼ tsp. salt
    1 quart blueberries
    2-1/4 cup flour

    Preheat oven to 350 degrees. Grease and flour pan(s). Dust berries with part of flour – berries to be folded into batter last. Mix ingredients in the order listed, fold in berries and pour into 9 x 13 pan or into two round pans. Sprinkle top with a small amount of sugar. Bake for 30 to 35 minutes or until toothpick inserted in middle of cake comes out clean. (baking time will double if using frozen berries).
