    Spicy pickled okra is excellent. And cooked into a soup or stew (see: gumbo) the soluble fiber thickens the broth and is no longer slimy. All imo, of course.

    But because of the diverse coworkers I was fortunate to have, I learned to try what I thought of then as exotic stuff, and like most of it still: Beef tendon and tripe, all kinds of sashimi, collard and mustard greens, goat meat.

    Well, I have had curried goat at a Jamaican restaurant near where I used to work. It was on their lunch buffet. It wasn't baaaaaaad. :): But beef tendon? I usually refer to that as "gristle".
