How you store anything is key to it's long term viability. Cool, dry, dark, etc..

Cleaning the can before opening and opening it with a clean can opener is also a good idea.. How many of you wipe off the lids before you open the can? How many of you wash your can opener after using it?

    WE do.
We have a lot of canned goods on the shelves. We date/rotate/use/replace.

    pop the can!

If you can press the top lid, or bottom lid and it pops- it's no good. It means air has entered the can and its probably bad.

if you press the top/bottom of the can lid and you can't hear a pop than its ok to eat. the reason for canning is to keep the air out.

food campanies are required to put dates on their products. after a length period of time, it loses it's nutrition value (i.e. experimentation date) but it's still good to eat and has some nutritional value.
