Last year I helped my parents move some stuff around at thier house and we found some home canned stuff from the garden. The only bad part was, my mom hasnt canned anything since her mom died in 1990. I opened some of it and most of it was bad and the rest wasnt worth the chance. As for store bought canned food goes, I have eaten that stuff years past the best by date and Im still alive.

    canned goods stay good

I don't know if the principles are the same but my brother and sister ate some canned (in jars) caulifllower, that my mother canned.

My mother passed away in 1984.

    I don't like cauliflower but I have a jar:)

The only problem I've had with canned food was when I was cleaning out my Dad's house after he moved out and found some old cans. Anything that had tomatoes or tomato based sauces ate through the bottom of the can and damaged the steel shelf that it was sitting on.
Canned food does go bad eventually. You can stretch the expectation date a little but over a year out of date things get iffy. It may just taste a little off, and it may give you the skitters. Really if you ask me, I'd really rather spare myself the skitters if at all possible, especially if I'm living off of my stockpile.

I have eaten C-Rats (Canned Rations) from the '40's and '50's before...
Course that was back in the Early '90's too...

I've eaten some old C-Rats too and the taste didn't seem a bit worse than the ones that were "current". I know it seems silly but it seems that canned goods have a very short shelf life now as compared to say 30 years ago. We used to stock up on lots of stuff and use them without giving the "best by" date a thought. Over time though, we have had several instances of leaking cans and bad smelling contents so we don't push the dates as much as we used to. Does depend on the specific contents of the can as well. Long term storage seems to be much better served with 25 yr shelf life items IMO. Well, maybe just a little Spam.
