Stir in 2 1/4 cup flour, cornmeal, salt and 2 tablespoons olive oil
Blend well and then knead in remaining 1/4 cup flour, about 5 minutes.
Put in deep, oiled bowl, coat by turning dough over.
Coat with plastic wrap allowing dough to double, about 1 hour.
Punch down and knead four times. Press into a 10 1/2" oiled cast iron skillet.
Allow to rise about 15 minutes.
Press dough down slightly around edge of pan to make a rim to the crust.
Spread half of the cheese first over crust.
Spread half of the sauce over the cheese.
Spread half of the meat and or veggies over the sauce.
Repeat with remainder of your toppings.
Place the skillet in the oven cold on the middle rack and then heat the oven to 500. When preheating is complete, turn down to 400 for 30 minutes.
