    yeah.. sadly.. wasnt exactly ready ya know.. by noon yesterday i wasnt even in bed and was up for 30 hours. too warm to let it hang. no freezer to quarter it either. let alone pack it with ice.

    It is very warm to hang them long right now. Nothing wrong with having them processed. Getting some smoked sausage? Always liked that stuff.

    back straps are getting sliced into chops, front shoulders = ground burger +beef fat, rump = roasts / 2 steaks, 10 pounds of jerky, 10 pounds of snack sticks.
