back straps are getting sliced into chops, front shoulders = ground burger +beef fat, rump = roasts / 2 steaks, 10 pounds of jerky, 10 pounds of snack sticks.It is very warm to hang them long right now. Nothing wrong with having them processed. Getting some smoked sausage? Always liked that stuff.
