    I use charcoal so here is my procedure. indirect heat for all of the cooking. Place crust on grill with not sauce or topping and cook till light brown with a few "tasty black spots" occur then flip and finish till same coloring occurs. Then remove from grill add sauce, cheese, bacon and other desired toppings then return to grill to melt and brown cheese.

    I have not tried on my gas grill yet. but I am sure there are others here who have.
