    Do you have white tail deer over there? ...and if so, are people allowed to hunt them?

    (I have zero knowledge of much of anything France-land related...except it's like a state law to wear a funny hat and smoke cigarettes while carrying around a loaf of bread)

    Any large roast works. Leaner the better, though all venison is pretty lean. If you're having it processed, go ahead and have it sliced 1/8" across the grain.

    Nice. Just for clarity, I make real jerky, not that weird **** that's ground and then squeezed through a caulking gun.
