    Evening all.

    Enjoying this years wine made from homegrown Frontenac grapes, had to cold freeze some of the acidity out, now it's just about right.

    How do you cold freeze some acidity out?

    Put the wine in the refrigerator for about a month and then decant, excess acid will have crystallized out and sunk to the bottom. Frontenac grapes are tough, low maintenance vines but produce a high acid grape.

    Yes. Not all grapes produce this level of acidity, I planted Frontenacs two years ago because of the poor soil we have around here. They take more work after harvest, but i"m sold on them, planting whites next year.

    In a garage
    as a kid we had a huge concord grape vine in the back yard. We lived on grape juice, jam, jelly. Any kid caught trying to take grapes would have to deal with my grandpa. Not many tried. :)
