I once saw a usenet group (yes, I am that old- I think it was rec.woodworking, not that I ever did much of that) where they had their own things, like INGO's sarcasm-in-purple, Denny award, etc., one of which was the definition of SWMBO. They did explain the original, for Mrs. Rumpole, however the definition someone came up with is the one I always recall when I see the acronym:

She Who Must Bend Over

I didn't say it wasn't rude. I just said that was the one that to me was most memorable.
