From what I can tell the Ruger MKIII Competition's hand grips are specifically carved for right handed shooters, and Ruger doesn't appear to offer it in a LH configuration. About 10% of the US is left-handed! I'm constantly aggravated by being overlooked on things where handedness actually MATTERS. On this particular gun the Cocobolo grips even are carved specifically to fit a RH shooter. With CNC lathes etc. it seems like it should be simple to flip a gun's CAD images in the computer and produce parts that are the mirror image of a right-hand gun pretty easily.

Ambidextrous is the way to go. I know in the military years ago we had to handle and fire pistols right handed. Felt weird for me, but I understood the reasoning. That way there is no chance of a serviceman grabbing a 'wrong-handed' weapon in the heat of battle. Everyone was trained to use the same hardware the same way. If it were ambidextrous wouldn't have mattered so much, but for most service weapons I'm betting they are still right-hand only to eliminate any possible confusion and to simplify design.
