My daughter can legally own, her husband cannot. If I gift her a weapon how do I make it unequivocally clear it is HER weapon and not his. I want to protect them from overzealous LEO's if possible,

The pragmatic answer probably depends on his "status". I know a couple like this where the husband is prohibited because of a felony a decade or more earlier. Since then his served in Iraq and turned his life around. She owns the guns.
