Or a cast iron pan if you don’t want something as limited to one use as a pizza stone. But then you probably have to make smaller pizzas.

My stone just sits in the oven always. I made another pizza (same way), but it was larger than the stone - got a bit smoky in the kitchen.

Serious Eats has a good recipe for pizza made specifically in a cast iron pan.



PS - I've actually had to install a button to disable the kitchen smoke detector because it's connected to a buzzer and strobe light OUTSIDE THE HOUSE. It's embarrassing to walk outside and yell, "It's OK! I'm just making cajun catfish!"

We flip the cast iron over and use the bottom, cook em on the grill.
We don't do it often enough to buy a pizza stone

If you want to be really authentic, you need a pizza stone and Rosetta Stone so you can speak Italian while making the pizza!
