When do groundhogs start to really come out? I saw one today and was reminded of how awesome they taste. I asked a cousin and the reply was "when you see em".
I usually see the herd of them that lives across the street out and about after it's staying warm in the spring. My daughter saw a couple of them out the other day, but once it warms up they are usually out a lot more.
They come up late winter/early spring to mate and then "hibernate" again until it starts staying consistently warm. That said, our farm ones come out earlier than the ones in the field do. Probably because they eat feed left over from the cows.

The stuff I had was some of the best roast I have ever eaten. I believe my aunt cooked it half way with potatos and then threw them out and then put in the veggies that were going to be ate. The first potatos were to soak up some of the grease. Im going to start asking around and see if I cant find me some.
I ate it once years ago and didn't care for it.
I hate the things though, so kill all you can. They are very destructive, undermining sheds, destroying half a garden in a day...
Two weeks ago up her in northern Indiana there were muddy footprints around our groundhog den. Most likely a male looking for love, since he gets up earlier than she does.
