I bought these a few years ago, one was listed as a folding vegetable knife, and the other is Cold Steel Griv-Ex boot knife, anyone else find these knives interesting?

    Griv-Ex I've seen these before.
Do they have a sharp edge?
    Can they be sharpened?
It's basically plastic right? Or something harder/stronger?

Yes, basically plastic, the blade had a spine on either side of the blade to give it some stiffness, the handle has a rubber grip, the ceramic had no lock, so I keep it in an old multi-tool case. I've never tried carrying in NPE. I need a sheath for the Cold Steel, it has a good point, but not sharpened, yet, but a file could be used to put an edge on it. The "fruit" knife has a really good edge, and will shave you, but as I said, it has no lock, so using it would be problematic.

These used to be more common before the full body scanners were implemented , with modern screening tech these can be found. They will get through basic metal detectors without issue however.
