We did the 2 hr drive each way, today for the 700.Bailey's Discount in North Judson have some Pit Boss pellet grills if anyone is looking. 1000 and 700 size, seems like a good deal especially the 1000.

It was about the longest 220 miles ive driven in my life. We went past Bum **** 3 or 4 times.
Thing two put it together when we got back to the house.
Tomorrow afternoon after the first burn we are gonna run a few racks of babybacks.

Obviously weight comes into play but I've found allotting 2hrs per pound works well. I do brisket at 250° however. The 2hr per lb includes a 1 hour rest in a cooler tooHow long are you guys smoking flat brisket for at what temperature?

Did a flat Sunday. Was 4.25# and total time was right at 8 hours, including rest. Every piece of meat is different and different fat contents will require different cook times too.I don't know weight just yet but I have a 15.71Lbs(pre trimmed and seasoned) brisket that I was going to cut the point off of and divide the flat into two pieces. Maybe 4-6 pounds?

When it comes to smoking I always try to give myself a couple extra hours from when we'd normally eat just in case. If goes according to plan we eat early...lol
