I've never made Kimchi but have seen that a lot of people do and seem to love it. I am on a fermentation group on Facebook and they talk about all sorts of strange concoctions. I have apple cider vinegar going in another 20 gallon crock and it is smelling very strong. I think it is about ready to bottle. After seeing stuff on that group, I keep wondering how big of a scoby I may find in there. That crock is short than the one I bought today but much bigger in diameter and they say the scoby grows to the diameter of the container.
