    I personally have never made it but will request it with poached eggs
    It's hard to find restaurants that serve real hollandaise. Most use a mix these days. To make it properly, you have to separate the yolks from the egg whites, then warm them using a double boiler until they just start to thicken up. Then (and this is where the 2nd person comes in), while continuing to stir, drizzle in clarified butter until you get the proper consistency. Then a little fresh lemon juice and while some people use tabasco, I prefer a little cayenne pepper. Not enough to make it "hot"... just enough to make it "sparkle" on the tongue. :drool:
