This is my rough recipe, no batch is ever the same though. I did tie for first this year in a chili contest with it though.

    half pound of bacon chopped
    1 large onion diced
    1 bell pepper diced
    4 Jalapenos diced
    1 Serrano diced
Sautee these then add 1 pound pork sausage and 2 pounds ground venison and brown
    then add
    2 cans of tomato sauce
    1 can spicy V8 juice
1 real beer of your choosing, (I usually use Kona Big Wave or Killians red)
2 cans bush's hot mild chili beans
    garlic powder
a big handful of chili powder ( I use the stuff Rural King carries in the big containers for my first handful)
    hot sauce to your liking
    simmer for 30 minutes
then add more chili powder (Mexene for finishing), S&P, and hot sauce to taste

I will add noodles occasionally if it is for a bunch of people because noodle are a cheap filler. If you do add noodles, you will have to add water.

Ground beef, lots of onions, pureed tomatoes, whatever combination of kidney beans and/or black beans are in the cupboard, salt, pepper, and this.

I honestly don't like a lot of chili in my chili. It's more like seasoned tomato/bean/beef soup.

And we put macaroni in it if we need to stretch the leftovers to be enough.

Start with quality spices and get a quality chili.

Personally, I like a dash of cinnamon.

:+1: I do like regular goulash.. mom's. I am taking some of the recipes in though, who is hungry??? I am going home to make chili tonight with some "hybrid" recipes.

I have a friend that makes chile but puts a hershey's chocolate bar on top of it when its done simmering... I have eaten the pepper chocolate bars before so it might be good, I have never tried his chocolate chili...

Oh dear God, no. No chocolate in Chili. Chocolate and cinnamon is what makes Skyline chili totally inedible to me.

Though Chili Mac at S&S is damned good.

    Must have been the Noodle.

    THAT was epic, and repworthy...

Same with my x-wife. She was so frigid, the furnace would kick on everyting she walked past the thermostadt.

:joke: I didnt know my ex 's sister was married to you.. last I heard she ran off with a guy that got out of prison... that trait ran in the family.. except my ex could kick the neighbors furnace on. I made a lot of shelby's texas chili mix.. she hated chili.

Feeds my wife and I 2 meals each (and I eat a lot)
    1. Brown 1lb of your choice of ground meat (skillet)
    2. Boil half a box of macaroni noodles (small pot)
    3. Dump can of Bush's mild chili beans into a large pot (this will be the pot that everything is dumped into) - set on medium heat
    4. Small can of tomato sauce (we use kroger brand)
    5. Red Gold can of petite diced tomatoes-lime cilantro
    6. Can of corn (we use kroger brand)
    7. Your choice of chili seasoning dumped into the large pot, or directly on the meat as you are browning it (we use McCormick's mild chili packs)
    8. Once the meat is browned and the noodles are to your liking, dump everything into the one large pot and let it simmer for a few minutes.
    9. Enjoy with some sharp shredded cheddar on top.

Are there better recipes out there? Yeah, but this is easy and requires no skill ;)

What's with all the ground up meat? I only see one mention of ANY kind of roast or stew meat.
Leftover pork is a good time too.

Why are you all so mean to your beef? What did it ever do you to you?

I like to make a "taco" chili where in addition to the normal ingredients listed above, I would add taco seasoning and powdered ranch dressing mix.... it gives it a nice different flavor than the standard flavoring..... but to each his own

When I get home, I'll pull my personal recipe for pork shoulder and roasted poblano chili. It's much more Mexican than Tex/Tex-Mex style, but probably my favorite chili of all time.

I'm not a big cubed beef fan but smoked pulled pork shoulder makes IMO the best chili.
