    Uncovered the grill...cleaned up some cobwebs and used a brass brush on the grates. Started up my charcoal chimney...using lump charcoal, not briquets.

    Put coals in smoker box and added hickory...put dry rubbed ribs on the grill.

    Main grill temp is now at 240, smoke is developing nicely, time to close it up for a few hours...dry rub is starting to caramelize and melt, the smells are great.

    I wondered if that style of smoker worked very well. Ive been wanting one for a while now, but I cant get past the fact I could build a nicer one for the same money.

    Awesome! Nothing like good ribs.

    Sunday I cooked ribs for the first time ever, bought a box of 5 slabs of St. Louis style and they was delicious. While it was a long time to cook them, it was well worth the wait, and will be going for another slab real soon. Below is my finished ribs on the grill.
