The best CC gun you can carry is whatever you can. If you can hit what your aiming at and trust it, then that's the right one. Here are a couple of mine.
My every day carry is a SA loaded operator micro 3". She has never given me any problems. You should be able to find a good used SA for the $500 range. Para also has a new model 1911 called the GI Expert that i've retail for the $500 range.
I also have large hands but like the compacts. I have two compacts that I carry, 1st is a SA micro operator 3", using the bump pad on the mag as a finger rest. 2nd is a USPc 45, fits my hand great and as long as i'm not to fat that day it's not very hard to hide.
